My Favorite Tomato Sauce
If your family is anything like mine, then tomato sauce is a staple in your kitchen. Here’s one of my favorite tomato sauce recipes from The Frankies Spuntino Kitchen Companion & Cooking Manual (click on the image below to enlarge). It’s a great base for all your Italian dishes. Hope you enjoy!

French Onion Soup
3 oz Butter
2 lbs Yellow onions, thinly sliced
2 tsp Granulated sugar
½ cup A/P Flour
3 cups Water
2 oz Red wine
4 cups Beef broth
½ loaf French baguette
1 clove Garlic, peeled
16 oz Gruyere cheese, shredded
Melt butter in a stockpot. Stir in sugar. Cook onions over medium-low heat for 30 minutes, or until they are caramelized. You will need to stir the onions occasionally at first, and then regularly as they get closer to being done (to prevent burning around the edges).
Stir in flour until well blended with onions and pan juices.
Add water, wine and beef broth to the pan. Bring the mixture to a boiling and then reduce the heat to low. Cover the soup and simmer for 15 minutes to blend all the flavors together.
Cut one inch thick slices of bread from the loaf. Rub each slice on both sides with a peeled clove of garlic. Lay them in a single layer on a sheet pan and season both sides with salt and pepper. Toast slices at 350oF just until lightly browned and crisp (10 minutes).
Using a ladle, divide the soup between eight oven-safe bowls. Place 1 slice toasted bread on top of the soup in each bowl.
Generously sprinkle Gruyere cheese on top of the crouton. Put under broiler for 2 to 3 minutes to let the cheese melt.
Serve immediately.
